Wild and Farmed Sea Bass (Dicentrarchus Labrax): Comparison of Biometry Traits, Chemical and Fatty Acid Composition of Fillets

Sea bass is a fish widely produced, consumed and appreciated in Italy. Its intensive rearing system provides the consumption of valuable to wider population. Thanks use an appropriate feed, it possible obtain reared sea which are richer total lipid with majority presence polyunsaturated fatty acids, such as n-3 n-6 series. In this study, 75 specimens European coming from three different origins (two farmed one wild) were considered, 25 each origin. Biometry traits valued chemical acid profile fillets. Biometric indices, proximate composition percentage significantly affected by system. Fishes (IRS) showed highest value relative condition factor, higher content that influenced n-6/n-3 ratio atherogenic indexes, values indicated their flesh for human healthy alternative wild fishes.
